  • Step 1. Heat oil in a large skillet. Add onion and sauté until softened. Add garlic and cook for 1 minute.
  • Step 2. Add beef and break up with a spoon; cook until browned. Stir in taco seasoning, then tomatoes, green chiles, and cream of chicken. Cook, stirring, until thickened; remove from heat.
  • Step 3. Break up chips into small pieces.
  • Step 4. Preheat oven to 350°F. Pour one-third of the meat mixture into a 9-by-13-inch baking dish. Top with 1/3 cup shredded cheese, then half the chips. Repeat. Pour the remaining meat over top, then the remaining cheese.
  • Step 5. Cover with foil and bake for 30 minutes. Remove foil and bake until browned about 20 minutes.
  • Step 6. Cool slightly before serving with fresh cilantro.

  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, thinly sliced
  • 1 lb. ground beef
  • 1 (1-oz.) pkg. taco seasoning
  • 1 (14.5-oz.) can diced fire-roasted tomatoes
  • 1 (4.25-oz.) can chopped green chiles
  • 1 (15-oz.) can cream of chicken soup
  • 1 (9.25-oz.) bag Doritos Nacho Cheese-Flavored Tortilla Chips
  • 1 1/3 cups shredded Cheddar cheese, divided
  • Fresh cilantro to garnish (optional)

    1. Crush a bag of Doritos (about 9.75 ounces) into coarse pieces. Spread half of them in a greased baking dish. I use the Nacho Cheese but you can mix it up with any other flavors.

    1. Mix 2 Cups of chicken with diced onions and garlic.
    1. Add taco seasoning for that fiesta flavor.
    1. Mix in a can of Rotel diced tomatoes and maybe some optional chopped green chilies.

    1. Pour in a can (10.5 ounces) of cream of chicken soup. It’s the magic binder.

  4. Layer It Up:
    1. Spoon half of the meat mixture over the Doritos layer.
    1. Sprinkle shredded cheese (about 1 cup) on top.
    1. Repeat the layers: Doritos, meat, cheese.
  5. Bake to Perfection:
    1. Cover the casserole with foil and bake for 25–30 minutes.
    1. Uncover, let the cheese bubble, and turn golden.
