- Before you start, it is important to set your oven to 350°F and place a sheet pan with a parchment paper lining on the countertop. You can do these steps and set them aside temporarily.
- In a bowl, blend the flour, baking soda, and cornstarch using a whisk. You can do this part and set it aside.
- In another big bowl, first, using an electric stand mixer equipped with a paddle attachment, blend the butter and the brown sugar until you achieve a creamed texture. Whip them for roughly 2 minutes or until they are airy and fluffy without any lumps.
- Include the peanut butter in the sugar and butter mixture and/or cream it smoothly. Use a spatula to scrape the sides of the bowl.
- Mix the egg and vanilla with the butter mixture and continue mixing till it forms a fluffy, homogeneous mass.
